2 chicken breasts (each sliced horizontally into 3 thin pieces and pound)
1 tablespoon butter
2 tablespoon olive oil
8 oz’s mushrooms
2 cloves of garlic, minced
1/2 an onion (chopped)
1 (10 oz) bag fresh spinach-
A pinch of salt
6 oz’s basil and tomato feta cheese-
2 cups seasoned bread crumbs
3/4 cup butter (melted)
Preheat oven to 350.
Slice chicken breasts to prepare for stuffing. Pound each breast to thin.
Heat the butter and olive oil in a large skillet over medium heat for 1 minute.
Add mushrooms, onion, garlic, pinch of salt and pepper. Saute for 5-7 minutes or until mushrooms are soft.
Next, add spinach and sauté just until wilted and tender.
Take the skillet off the heat, add in feta cheese and mix well.
Distribute feta mixture onto each chicken breast.
Wrap chicken around mixture and secure with a toothpick.
Roll each breast in bread crumbs until well coated.
Place in glass baking dish and pour the melted butter over them.
Cook for 30 minutes and serve.
